Before going vegan I wasn’t too big on fast food but one place I have always liked is Taco Bell. So veganizing a crunchwrap has been on my list of things to do for a little while now. But for some reason I was intimidated. I don’t know why because they are easy to make and so delicious.
I absolutely love Greek food. Before I went vegan spanakopita (spinach pie) was one of my all time favorite things. Tiropita is pretty similar to spanakopita. Instead of spinach and cheese inside, it is all cheese. Oh yeah, sign me up! This recipe is so easy to veganize and so delicious. A fun appetizer or snack for the summer since it is light, flakey and cheesy.
Prior to going vegan I would have never thought tofu would be as incredible as it is. I can make just about anything out of tofu. Vegan cheese substitutes, vegan meat substitutes, it can add creaminess to dishes, tofu scramble. I mean really you name it and tofu can most likely do it. So it is of course no surprise that these vegan chicken nuggets are pretty darn incredible.
I do not like many desserts if I am being honesty. I definitely have a savory tooth instead of a sweet tooth. BUT there is one dessert I have always loved and that is coconut cream pie. The light fluffy cool whip topping, the thick custardy pudding and a crumbly cookie crust SIGN ME UP!
I love potato croquettes. I used to love sometimes at restaurants they would just magically appear as a little side with your meal. Why are these little things so magical? I will tell you. It is essentially mashed potatoes that have been coated in breadcrumbs and deep fried. Who wouldn’t want that? To keep this version a little lighter and healthier bake these. I also added in some vegan cheese in the middle so you get some ooey gooey melted goodness in the middle.
I love roasted potatoes. They are always delicious, easy to make and you can add any flavors you like to it. This one combines a bunch of classic Italian flavors to make a delicious dish. This makes quite a few servings so you can use it for meal prep or it is great for parties and BBQs.
I love nachos. They are such a classic comfort food. Being vegan doesn’t mean you don’t get to enjoy your nachos. These nachos are not only easy to make but they are full of flavor and color. They are soy free and as long as you use gluten free chips they are gluten free! They are ready in about 15 minutes so get read to be eating some nachos!
Growing up one of my favorite soups was tortellini in brodo. A simple soup of just broth with little light and fluffy tortellini floating around. Tortellini are great in soup, sauce, pasta salads and especially cheesy bakes. To make these vegan is actually very easy and they taste incredible. However, the process for making these is a bit time consuming so do keep that in mind!
Have you guys had polenta before? Not only is it delicious, it’s easy to make and gluten free! There are two kinds of polenta the pre-cooked one that comes in a cylinder and the actual grain. For this recipe you need the grainy, boil on the stove version. Cooking polenta is very easy so don’t be intimidated if you haven’t made it before.
